Volactose® Whey Permeate
Volactose® Whey Permeate is a premium quality, finely textured de-proteinised whey powder, suitable for a wide variety of applications.
It contains 86% lactose and is an ideal substitute for whey powders in products where salt reduction, texture and visual appeal are the foremost requirements.
Having a naturally salty flavour enables Volactose® Whey Permeate to be used to reduce or eliminate salt from food formulations, thereby minimising the sodium content of the finished product.
It is particularly suited to baked products, because it gives superior surface browning, depth of flavour, moisture retention and crumb.
